After being a little discouraged in the spring from laboring in the garden and pulling so many weeds, it's finally paying off. Our corn turned out great this year as well as beans, tomatoes, peas, onions, potatoes and our one zucchini plant that is producing more than enough zucchini. I'm still worried about my pumpkins. They are being attacked by these. Any advice? Here is my favorite zucchini recipe:
Frosted Zucchini Chocolate Brownies:
1 c shortening or oil
2 c sugar
2 tsp. vanilla
2 c flour
1 tsp salt
4 sq unsweetend chocolate (or 9 T cocoa)
4 eggs
1 c grated zucchini
2 tsp baking powder
Melt the shortening and cocoa. Stir in the sugar, eggs, vanilla and zucchini. Mix together the flour, baking powder and salt. Add the dry ingredients to the chocolate mixture. Spread the batter in a 10 x 15 rimmed cookie sheet. Bake at 350 for 25-30 min. Frost with chocolate frosting.

I finished my 2nd half marathon (Mesa Falls) this past weekend with a time of 2:09:52 beating my last marathon time by about 3 minutes. AND, I'm only a little bit sore.
