Brrr...

The most wonderful time of the year has come and gone and now my LEAST favorite time of year is here. I so long to see sunshine again and look forward to Spring thaw.

In the meantime, here is a yummy recipe to keep your insides warm:

White Chicken Chili

2 cans great northern beans
1 large onion, chopped
1 stick unsalted butter
1/4 cup flour
1 14oz can chicken broth
2 cups half and half
1 tsp tabasco sauce
1 1/2 tsp chili powder
1 tsp cumin
1/2 tsp salt
1/2 tsp pepper
dash cayenne
2 small cans green chilies
1 roaster chicken, cut up
6 oz monterey jack cheese, grated

Cook onion in small amount of butter until onion is softended. Melt stick of butter, which in flower on low heat. Whisk for 3 minutes. Stir in onion, broth and half and half. Boil on medium heat. Add spices. Add beans, chicken, green chilies and cheese. Let it cook about 10-15 minutes on low/medium heat.
